The best example I can think of is 2001: A Space Odyssey, as well as Un Chien Andalou. For action at least. What else?

Really they're used quite often and are encouraged as a part of film theory. Most matches are motion.
Michel Gondry is fucking terrific with them. I haven't seen Eternal Sunshine since the theater, but I imagine it has a lot of them. His music videos certainly have great examples.
garden state has a few. from someone laughing to crying to exchanging shit. boondock saints also, from brothers being gay, then straight, till a totally diff character being gay.

there's a stephen chow movie in which a team of kungfu masters get ambushed by another group while stephen chow's character was on vacation with his wife, and he had some funny match cuts. like one guy was about to get his balls squeezed by an evil kungfu master lady, and then it cut to a bunch of eggs cracking, which pulled out to stephen chow and his wife making breakfast. and then later there was a shot of a guy's head about to get busted, and it cut to a water melon getting busted, which pulled out to chow and his wife in the market...etc.
