How about Mark Wahlberg?  After Boogie Nights, he has made some truly terrible films (except when he works with David O. Russell).

Dustin Hoffman post-Rain Man -- Family Business, Billy Bathgate, Hook, American Buffalo, Outbreak, etc.  However he was good in Wag the Dog and I Heart Huckabees.
Music is your best entertainment value.

I never thought about De Niro, but seeing that list makes me realize he hasn't done anything good in a while.  Believe it or not, the only decent film on that list is Flawless.  De Niro gives a good performance, and Phil Seymour Hoffman is great as usual.
